Spread Your Poached Pears Recipe

There is nothing wrong with spreading your pears with some creamy cashew cheese. This recipe is literally "Nuttin Ordinary": and gives us luxury with a wine and cheese "pearing".

But to eat in luxury, drink some wine and get your pears poached, see recipe below.

INGREDIENTS
6 firm Bartlett pears 
1 bottle red wine 
1 whole vanilla bean 
2 cinnamon sticks 
2 bay leaves 
2 cups sugar 
16 ozs. Nuttin Ordinary Original cashew cheese spread 
1/2 cup powdered sugar
A pinch of cinnamon 
2 tablespoons of Earth Balance or similar vegan butter alternative
DIRECTIONS
  • Peel the pears and leave the stem intact.
  •  In a large saucepan, bring wine and an equal amount of cold water to a simmer.
  •  Split vanilla bean lengthwise and add to wine and water mixture. Add cinnamon sticks, bay leaves, and sugar, to taste. 
  • Add pears to liquid and simmer for about 20 minutes or until tender. 
  • Cool pears in wine mixture to room temperature. You can refrigerate them in the poaching liquid until you're ready to fill them.
  •  Remove the stems from the pears and set stems aside. Core pears with an apple corer, leaving pear whole. 
  •  Stir together Nuttin Ordinary Original cashew cheese, pinch of cinnamon and powdered sugar until smooth. 
  • Transfer to a pastry bag, or if you do not have one, use wax paper tightly wrapped into a cone with the corner snipped off. Pipe filling into cored pears and finish by putting the stems gently into the cashew cheese filling on top of the pears. 
  •  Bring sauce up to a simmer and reduce by half. Add vegan butter substitute to reduced sauce and stir until combined. Spoon generously over pears. Cool to room temperature before serving.

INGREDIENTS
NOTE: Recipe is Martha Stewart with Dorian Cattani's twist of course.
(Makes 1 large loaf or 4 small loaves)

1/4 pound (1stick) unsalted butter, at room temp
1 cup sugar
2 eggs
1 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup semi sweet chocolate chips (Dorian's Rescue Ingredient)
DIRECTIONS
  • Preheat the oven to 350'F. Butter a 9x5x3 inch loaf pan or several small pans.
  • With an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, beating well.
  • Sift the dry ingredients together and combine with butter mixture. Blend well. 
  • Add bananas, sour cream, and vanilla. Stir well. 
  • Stir in nuts and chocolate chips and pour into the prepared pan.
  • Bake 1 hour, until cake tester comes out clean. Turn onto a rack to cool.

NOTE: I used organic eggs & butter. Makes me feel a little better about the calorie intake.
I enjoy giving this as a gift to friends because it always comes out so well.

2. Flowers: Champagne submerged in a dozen roses, frozen in ice cubes!

This is the perfect way to seduce and heighten the senses in the boudoir. Trace your  favorite spots on your date with the iced roses and then devour them. If it is easier, make popsicles instead: this will give you something to hold and the rest I will leave up to your imagination.

Just make sure roses are not treated with pesticides and no allergies exist. Sometimes you can buy these already packaged as edible flowers at your grocery store or order online. Simply place flowers in ice trays, fill with distilled water and freeze. If you use tap water, the ice will not be crystal clear.


To prevent flowers from floating to the top...fill water in three layers. First layer just a 1/4 inch of water, freeze. Second, add flowers and a little more water. Freeze. Fill to top and freeze. Finished. Different edible flowers can be used. Again, make sure they are not treated and will not cause an allergic reaction. Here is a list from About.com:

Scarlette Swaps: Super Ice Cream Bowl Recipe #3

Ice Cream Sandwiches

INGREDIENTS
1 box Graham Crackers
1 Banana (semi ripe)
1 c. Smoothe Peanut Butter or Almond Butter
1 c. Brown Sugar
2 1/4 c. Unsweetened Almond Milk
1 Tbsp. Tapioca Flour (or cornstarch)
1 Tbsp. Pure Vanilla Extract (Singing Dog Brand is great)
3/4 tsp Sea Salt
4 oz. Dark Chocolate (Chopped)
DIRECTIONS
  • In a medium sauce pan, combine unsweetened almond milk, brown sugar, tapioca flour, pure vanilla extract and sea salt.
  • Whisk in smoothe peanut butter until thickens (a good indicator, is when small bubbles appear...kind of like when making pancakes).
  • Remove from heat.

  • Freeze for one hour. Let cool, but do not let completely freeze.
  • Chop Dark Chocolate. (if you don't like dark chocolate, you can replace with semi sweet).

  • Grab a cookie sheet and line with parchment paper.
  • Remove peanut butter ice cream from the freezer and combine with dark chocolate chunks.
  • Pour peanut butter ice cream mixture onto cookie sheet.
  • Cover with another sheet of parchment paper.
  • Freeze for 4 hours or more.
  • Cut Peanut Butter Ice Cream into squares. Measure with Graham Crackers.

  • Flip over squares into serving or storage tray.
  • Add Banana slices on top.
  • Top with Graham Square to complete Elvis Presley Ice Cream Sandwich.

Lemon Basil 
Infused Sorbet
w/ Strawberry Chutney

INGREDIENTS
Lemon Basil Infused Sorbet
16 oz. Fresh Coconut Milk
1 c. Organic White Sugar
1/2 tsp. Sea Salt
1 pkg. Basil Leaves (washed)
3/4 c. Fresh Lemon Juice (not concentrate)
Fresh Lemon Zest to taste 
Scarlette Tip: Make sure not to get the pith (white part of lemon), as it is bitter. Use only the rich yellow skin.
DIRECTIONS
Lemon Basil Infused Sorbet
  • Pour Coconut Milk, Lemon Juice and White Sugar and Sea Salt into a sauce pan. Heat on low/medium, until sugar is dissolved. Absolutely, do not boil.
  • Remove from heat.
  • Make Basil chiffonades (roll leaves together and slice).
  • Place Basil into Steamed mixture and let steep for one hour.
  • Pour mixture into bowl, using sieve to remove Basil Leaves.

  • Add Fresh Lemon Zest to taste. Stir.
  • Pour into rectangular container with air tight lid.
  • Freeze 3-4 hours before serving.
  • Make Strawberry Chutney.

INGREDIENTS
Strawberry Chutney
2-3 Pkgs. Fresh Strawberries
1/2 c. White or Basil Sugar.
DIRECTIONS
Strawberry Chutney

  • Rinse, hull and dice Fresh Strawberries.
  • Add Sugar. I used Basil infused Sugar, given by my friend Emily at the Hoboken Food Swap.

  • Place Strawberry Chutney in an air tight container and let sit for a couple hours. It will form a slight natural syrup.
  • Assemble Lemon Basil Infused Sorbet and Strawberry Chutney.

w/ Skinny Girl

INGREDIENTS 
Grilled Pineapple Ice Cream
24 oz. Pineapple Sliced
3/4 c. Brown Sugar
16 oz. Fresh Coconut Milk
8 oz. Pitted Dates
DIRECTIONS 
Grilled Pineapple Ice Cream
  • Slice pineapple and place on stove top grill.
  • Sprinkle with Brown Sugar and cook. Turn over and continue grilling.

  • Pour Fresh Coconut Milk into Blend Tec Blender and add Dates. Use Smoothie button to blend.
  • Add Grilled Pineapples and blend again.

  • Pour into air tight container and freeze for at least three to four hours 
  • Scarlette's Tip: I used a tall Container, but it might be easier to scoop later if you use a rectangular short one: allowing more surface to be scraped by the ice cream scoop.
  • Next Make the Skinny Girl Spiked Coconut Sauce.

Skinny Girl Spiked Coconut Sauce
1 c. Skinny Girl Pina Colada
1 c. Fresh Coconut Milk
1/2 c. Pitted Dates
DIRECTIONS
Skinny Girl Spiked Coconut Sauce
  • Pour all ingredients into Blend Tec Blender.
  • Use Smoothie setting to blend.
  • Pour into container and store in the refrigerator.
  • Scarlette Tip: Do not be afraid to use more Skinny Girl. It will make you lose inhibitions and dance the calories off on the kitchen floor, or elsewhere. 
  • Make Candied Coconut Topping.

Candied Coconut Topping
1 1/2 c. Maple Syrup
8 oz. Fresh Coconut Shredded or Coconut Chips
DIRECTIONS
Candied Coconut Topping
  • If desired, brown Coconut on Stove Top in a large sauce pan.
  • Mix Coconut and Maple Syrup in a large bowl.
  • Spray Cookie Sheet and pour Coconut mixture onto it.
  • Flatten mixture. Bake at 350 degrees until lightly golden and hard. Be careful not to burn. Should be about 15-20 mins. Less if you toasted the coconut before.
  • Remove from oven and let cool.
  • Use hands to break into pieces. Store in an air tight container.

  • Asssemble Grilled Pineapple Ice Cream, Skinny Girl Spiked Coconut Sauce and Candied Coconut Topping.
